It's been an absolute age since I've written a "happy eating" blogpost and I'm a little ashamed! I've had some time on my hands recovering from a minor "surgery" (no really I was awake and watched so it really was minor) and nothing in life is more therapeutic to me than baking. I absolutely love baking but one of my problems is that I love all of the baked goods that are packed full of sugar. So instead, I decided to alter a basic oatmeal banana cupcake recipe with a few experimental "healthier" alternatives.
I give you the: Healthy(er/ish) Oatmeal Banana Chocolate Chip Cupcake
Original Recipe
1/2 sugar
2 eggs
1 cup mashed bananas
3/4 bananas
3/4 cup honey
1 cup flour
1 cup oats
1tsp baking powder
1 tsp baking soda
New Recipe
1/2 cup of honey
2tsp Chia seeds soaked in 6tsp of water
1 cup mashed bananas
1 cup flour
1 cup oats
1tsp baking powder
1 tsp baking soda
2 drops of vanilla extract
Almond milk to add batter consistency
Dark chocolate chips
2tsp Chia seeds soaked in 6tsp of water
1 cup mashed bananas
1 cup flour
1 cup oats
1tsp baking powder
1 tsp baking soda
2 drops of vanilla extract

Dark chocolate chips
Batter Method
1. Preheat your oven to 185 degrees
2. Mix all ingredients together in a large mixing bowl into a smooth consistency
3. If your batter is looking thick add as much almond milk as necessary to add a smooth batter-like consistency.
3. Add chocolate chips and mix evenly into the batter. I used 90% Cacao chocolate and used a knife to cut it up into chunks.
3. Line your cupcake tins with cupcake cases. I chose gnome cupcake cases because well, aren't they just adorable?!
4. Evenly divide your batter into the cupcake cases
5. Cook for 10-15 minutes until golden brown. Be careful as if you over cook they can become extremely chewy.
6. Leave to cool and devour all cupcakes in 10 minutes from excitement. Or share with friends, that's okay too!
