Iced Ginger Sugar Biscuits - Recipe


I'm finally back home and we all know what the means! I have basically taken over my parent's kitchen and have immersed myself in 3 months of being unable to bake, gorging! As I said in my 10 Reasons I'm Excited About Christmas post (love a plug-in), food is what makes Christmas. Even more so when it is full of cinnamon, nutmeg and ginger. I found this recipe in my dad's scruffed up recipe notebook and although I'm sure they derived from somewhere at one point, the source is technically "unknown", at least to me. These are a more spicier and softer version of a classic gingerbread recipe -  

Ingredients (Biscuits):


· 1/2 cup (1 stick) unsalted butter
· 1/2 cup packed light brown sugar
· 1/4 cup molasses (Treacle)
· 1 teaspoon vanilla extract
· 1 egg
· 2 cups flour
· 1 teaspoon ground ginger
· 1/2 teaspoon baking powder
· 1/2 teaspoon ground cinnamon
· 1/4 teaspoon salt
· 1/8 teaspoon ground nutmeg


Method: 

The dough:

1. In a large bowl, mix all of the wet ingredients including the treacle, vanilla essence and butter together. 
2. Once this has become light and fluffy, add in the Egg
3. In a separate bowl, add all of the dry ingredients together including the baking powder, nutmeg, cinnamon, flour and ginger.
4. Using a mixer, slowly combine the wet and dry ingredients together using a low speed setting.
5. Half the dough and using your hands (washed of course) and mould each half into two circular discs.
6. Wrap these discs in baking paper and leave in the fridge for minimum 1 and a half hours.

 Cutting and preparation

7. Heat your oven to 180 °C
8. Sift a small amount of flour onto your clean surface space and on your rolling pin
9. You can make your biscuits as thin/thick as you like, mine were quite thin at around .5cm in width.
10. Using cookie cutters (Christmas themed of course) cut out your biscuits
11. Place your biscuits a couple of inches apart on a baking paper on top of a baking tray




12. Your cookies should take between 10-12 minutes to cook to golden brown. Make sure they are a tad spongey still in texture when taking them out as they will harden up and cook a bit more when cooling.

Ingredients (Icing):

· 1 Egg White
· Cold Water
· 225g of Icing Sugar


Method:  

1. Whilst your cookies are cooling, using an electric mixer, whisk together the egg white and icing sugar.
2. If the mixture becomes too thick, slowly and carefully add small amounts of cold water
3. Using an icing bag and a tiny nozzle, pipe your biscuits with the icing sugar!
4. Devour entire batch of biscuits in 10 minutes from excitement. Or share with friends, that's okay too!
