Smarties Filled Fairy Cakes

Yup, you heard that right. Smarties filled fairy cakes, they have become a thing, perfect for birthday parties, afternoon tea or if your parents have gone away for a few days and can finally use up all their ingredients in the cupboard for free - for the sake of a blog post. Mwahahah. 



Ingredients for Fairycakes

100g Unsalted Butter
100g Self Raising Flour
100g Caster Sugar
2 Eggs
Vanilla Extract
1tsp Baking Powder
Mini Smarties

Method for Fairycakes

1. Preheat the oven at 175 degrees
2. Line a muffin tin with 8 adorable cupcake cases
3. Mix in a bowl all ingredients for the fairycakes and whip until light and fluffy
4. Pop about a tablespoon of the mixture into each of the cupcake cases.
5. Cook for 15 minutes until golden brown
6. Leave to cool down
7. Once cooled down, using a knife, cut half way (make sure not to pierce downwards too far) into the fairycakes in a circular motion to remove a middle section of the fairycakes.
8. Pour a healthy serving of smarties into the hole and replace the top of the fairycake.



Ingredients for Butter Icing 

175g of Icing Sugar
75g of Unsalted Butter
1tbsp Milk
Vanilla Extracted



Method of Butter Icing.

1. Pop all the ingredients into a bowl to whisk (electric whisk works best) to light and fluffy
2. Fill an icing bag (with a small-to-medium sized nozzle on the end) with the buttercream and in a circular motion pipe the fairycakes.
3. Devour entire batch of fairycakes in 10 minutes from excitement. Or share with friends, that's okay too!

  5. I did these! A while back for a friend's birthday and when she took a bite and realised there were smarties inside she flipped! Hehe, these look so good and it's making me want to bake them again! Your butter icing looks PERFECT.
