Hosting A Flat-Warming Brunch | ad

I love brunch. Fact. I personally am not a big fan of breakfast, I don't particularly like having food too early in the day and by lunch time I'm starving, so brunch is just my ideal meal, plus, it's an excuse to have prosecco mid-morning, so that's always a bonus. Holding a flat-warming party is something I've never really done, seeing as this is my first proper flat since I've moved into outside of university halls, it was an occasion to whip out the Kitchen Aid (okay, so my flatmate Emily whipped it out, I supervised) and pop open some prosecco.

Pancakes

You can't not have pancakes at a brunch, end of. This recipe, curtesy of my flatmate is great because they are light and fluffy and perfect to batch-make. This recipe is slightly adapted from Nigella Lawson in her holy grail ‘How To Be a Domestic Goddess’ recipe book.

Recipe

1 tbs baking powder
1 pinch of salt
1 tsp caster sugar
2 large free-rage eggs
30g melted butter
300ml whole milk
225g plain flour
Extra butter for frying

1. Mix the together flour, baking powder, salt and sugar in a large bowl

2. Make a well in the middle of the mixture and pour in the milk, eggs and melted butter and whisk it all together until the batter is lump free

3. Leave to stand for 15 minutes

4. Transfer the mixture into a jug (this is even easier than ladling the mixture into the frying pan)

5. Heat up a non-stick frying pan over a medium high heat and add a knob of butter to fry the pancakes, you should get about 3 pancakes in the frying pan at any one time

6. Nigella says: “When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it's time to cook the second side, and this needs only about 1 minute, if that”

We went for some fruit toppings, bananas and raspberries, but next time I definitely will be making some bacon to go with them, as everyone loves bacon. Also how fricking cute are these mini jars of honey and jam?!

'Morning Glory Muffins'

Another flatmate recipe, who when originally had created the name when she was 12, had no clue that the name was phallic, but I found it hilarious, so am definitely keeping it in this post. *Censored Material*. These are amazing, honestly I've never tasted anything like them. I'm not much of a fan of the whole 'fruit within pastries', but these are amazing! They are light and fluffy, and perfect for a brunch because people can also take them home with them!

Recipe (Makes 12)

300g Self Raising Flour
150g caster sugar
180ml whole milk
100ml flavourless oil (e.g. vegetable)
1 large banana (mashed)
1 large free-range egg
1tsp good quality vanilla extract
150g raspberries (fresh or frozen)

1. In one bowl mix all the wet ingredients together (milk, egg, oil, vanilla and banana) with a whisk until well combined

2. In another slightly larger bowl mix the flour and sugar together

3. Make a well in the dry ingredients and pour in the wet mixture and whisk to combine

4. Once this is lump free, add the raspberries stirring gently to mix them through being careful not to smash them all up

5. Line a 12 case muffin tin with muffin cases and pour in the mixture (you can to this using a jug to make it easy)

6. Bake your muffins in a 180 degree oven for 20 minutes or until they’re golden brown

7. Allow them to cool and then enjoy

Did someone say Mimosas? Yup, it was 11 o'clock and already opening the bubbly, hey it's Sunday! These are the easiest brunch drinks to make if you aren't really bothered to pfaff about with all the bloody marys etc. All you need are champagne flutes (glass or plastic, depending how much you trust your friends) and fill them up half with prosecco/champagne and the other with orange juice. I got these adorable cocktail fans from Tiger which I think look adorable!

Obviously you have to have the right tunes when you have people coming over. I put together a list of songs ranging from John Mayer, Adele, Paolo Nutini to start with and then, as the Mimosa's start to go down, it's all about blasting Ariana Grande and belting out some Whitney. The Panasonic Waterproof Bluetooth Speaker are perfect for singing along to some tunes as the high quality sound means hopefully it will drown out my terrible singing, whilst drinking your Mimosas, perfect for livening up the occasion. Although my flat isn't massive, the sound travels through it which means from the kitchen, bedrooms and living rooms, you can hear my belting out 'I Have Nothing' which is definitely a bonus.

Of course you need some sort of aesthetics. Flowers on the table, just brighten up the room and makes you look like your a well functioning adult! They are also totally picture worthy (when not dying).
As you can see we've got a Cinematic Lightbox (best investment my flatmate ever made) which we adore and I think makes for a quirky and instagrammable brunch! This one comes with a load of different emojis (here we chose the watermelon and champagne ones) to accompany the text!

Let me know what you would have at your brunch and if you have any flat-warming party tips too! A big thank you to my flatmate Emily for helping me on this post and dealing with my manic blogger 'lighting' stresses!
