However, I still do love me some good old fashioned cake and for my readers who like something a little more indulgent every now and again like myself, I've put together this little post just for you!
My mum was having a few of her friends round the other day and being the amazing daughter I am, I decided to bake my all-time favourite cake, The Lemon Drizzle cake. I absolutely LURVE this cake.
So I thought I'd share my recipe with you! Let me know in the comments if you'd like more recipes too because this gives me a great reason to bake (not that you ever need one ;) )
Recipe:
125g Butter (Softened)
175g Caster Sugar
175g Self-Raising Flour
2 Eggs
Grated Rind of 1 Lemon
5 tbsp Milk
1 Tablespoon Lemon Juice
For the Glaze:
Juice of 1 Lemon
Juice of 1 Lemon
4 tbsp Icing Sugar (sifted)
10. Once the cake has come out of the oven leave it on a cooling rack.
11. Mix the sifted icing sugar and lemon juice together in a bowl.
12. Using a skewer poke holes in the cake (whilst its still in the tin) and pour the glaze onto the cake.
13. Leave the cake to cool for half an hour before taking it out of the tin.
14. Devour entire cake in 10 minutes from excitement. Or share with friends, that's okay too!
Method:
1. Preheat your oven to 160 degrees
2. Line a loaf tin with butter and flour. You may use baking paper too, I prefer not to, because I just cannot deal with the hassle of cutting it and all that.
3. Put the butter and sugar into a large bowl. Using a electric mixer beat until creamy and the butter has softened.
4. Add in the eggs and beat on the lowest setting on the mixer
5. Sift the flour into the mix
6. Using a zester grate the lemon skin. Add the rind into the mix
7. Fold the mix using a "figure of eight" motion to ensure you don't over beat the mix
8. Spoon the mix into your tin and spread the mix so it fills all corners and is even.
9. Bake for 60 minutes (I know THAT long) until golden brown. Use a skewer to test whether or not its cooked - it should come out clean!

My favourite type of cake is lemon drizzle cake, which is awfully convenient haha! My mouth literally watered just looking at the pictures of this, I could probably manage the whole thing in one sitting!
