Banana Bread


When I was working on placement year I reckon my diet was 89% banana bread and the rest halloumi cheese. I'm totally obsessed with it. There's a very fine line I give myself for believing that it's mildly healthy minus the sugar etc and that therefore it's like eating one of my five a day it isn't
Being back at home with a kitchen that doesn't spell-out "Salmonella Poisoning" cough university flat 45 cough means I am back in my baking element and can happily add to my "Happy Eating" label!


Ingredients:

130g of Butter

140g of Sugar

2 Large Eggs

140g Self-Raising Flour

1tsp Baking Powder

3 Very Ripe Bananas

1tsp Vanilla Extract



Method

1. Preheat your oven at 180C

2. Start by chopping up the bananas and placing them in your KitchenAid and whisking until stodgy

3. Add in eggs, butter and vanilla extract and mix until light and fluffy

4. Add in the flour and sugar.

5. Whilst this is mixing, grease a loaf tin with butter and flour

6. Pop the mixture into the tin and bake for 45-55 minutes (or until you can stick a skewer in and it comes out clean)

7.Devour entire wreath in 10 minutes from excitement. Or share with friends, that's okay too!
