I know, how basic can I be. I can actually say I am yet to have baked a banana bread in lockdown but that may be that sometimes I do prefer myself some banana muffins as they last a bit longer than a loaf and plus, chocolate chips added is the ultimate yes from me, it's probably one of my favourite banana bread combinations. These are super easy, light and fluffy super tasty if I do say so myself. Also because they've got banana they're practically one of your five a day and totally count as a breakfast food.
Serves 12
Ingredients
100g salted butter (softened)
2 Eggs
87g Brown Sugar
87g Caster Sugar
225 Self-raising flour
1tsp Baking Powder
2 Over-ripe Bananas
170g Plain Dairy Milk Chocolate
3 drops of Vanilla Essence
Method
1. Heat your oven to 180 degrees
2. Using a sharp knife cut the dairy milk into small chunks and then pop into the freezer
3. Cream the butter and sugar together until combined in a mixer
4. Add in the bananas, eggs and vanilla essence until combined
5. Slowly add in the flour and baking powder in the mixer
6. Take the chocolate out of the freezer and fold into the mixture using a spatula
7. Line a cupcake/muffin tray with 12 cases
8. Bake for 25 minutes until tops are golden and a skewer comes out clean
9. Devour the entire batch in 10 minutes from excitement. Or share with friends, that's okay too!
These look delicious! I have never thought of making banana muffins instead of banana loaf, but definitely think I will give it a go when my bananas have had better days x

Thank you! I do love a banana muffin, they just last a bit longer and are easier to manage I think than a huge loaf because you can lessen the ingredients to make half the muffins etc xx

DeleteThese look and sound amazing! I will try them out in the future, as the only thing I've tried so far is banana bread muffins, these look a lot more like an actual cake. I'd definitely put dark chocolate in there though, I much prefer that to milk chocolate ;-)

Oh yeah they're a bit more of a cupcake but I don't think banana cupcakes are really a thing recipe wise, but dark chocolate would also work! xx
