A Summer's Victoria Sponge


I don't think you can beat a Victoria Sponge, it's a classic, tasty and easy to make when you don't forget the baking powder. 

Anyways, when you do remember vital ingredients, you can have yourself a lovely Victoria Sponge filled with Summer berries (this is said cake with baking powder don't worry)  I mean this is by no means anything new or wildly creative, but I thought I'd share it over on the blog as it's a faultless sponge recipe. 


Ingredients 

The Sponge

200g Caster Sugar
200g Softened Butter
4 eggs 
200g self-raising flour
1tsp baking powder
2tbsp milk or 1tbsp of condensed milk 
3 drops of vanilla essence

The Filling

1 pot of Clotted Cream
Blueberries
Strawberries 
Icing Sugar for decoration 

Method

1. Heat your oven to 180 degrees
2. Cream together your butter, sugar and eggs in a mixer
3. Add in the condensed milk/milk and vanilla essence
4. Mix in the flour bit by bit until completely combined
5. Split the batter evenly and put into 2x 20cm tins which are lined with baking paper
6. Bake for 20 mins (until a skewer comes out clean). Be careful not to overcook as this sponge bakes quite quickly! 
7. Leave to cool on the side
8. On top of one of the sponges, put a layer of clotted, yes that's right I use clotted cream! Then cover with a variety of berries. I used blueberries and strawberries, and I would also recommend adding some raspberries too. 
8. Place the other sponge on top and put a dusting of icing sugar on the sponge along with more berries of choice. 
9. Devour the entire cake in 10 minutes from excitement. Or share with friends, that's okay too!

    1. Oh definitely do! And the good thing is, if it tastes a bit dry or you over bake it, it doesn't really matter much because the cream and berries helps keep it soft! xx
