My Mum's 60th Chocolate Birthday Cake - Recipe


Last week it was my Mum's 60th birthday and I was left in charge of baking her a cake. I am a bit funny with chocolate cake as I don't like overly heavy or fudgy chocolate cake, but prefer a lighter and more subtle chocolate flavour so this one was definitely a hit. Of course, Walnut Whips being her favourite chocolate treat, I had to incorporate them on the top and adding a nuttier flavour into the frosting! 


The Sponge

220g unsalted butter, softened
220g (7 3/4oz) caster sugar
200g self-raising flour
4 large eggs
1 tsp baking powder
1 tsp vanilla extract
3 tbsp cocoa powder
2 tbsp milk
small pinch salt

Frosting

100g Softened Salted Butter
250g Icing Sugar (Sieved)
2tbs Nutella/Chocolate Spread
1 tbsp Cocoa Powder (sieved)
2 tbsp Milk 
Dairy Milk for shaving decorations 
3 Walnut Whips for Decoration

Method

1. Heat your oven to 180 degrees
2. Cream together your butter, sugar and eggs in a mixer
3. Add in your flour, baking powder, cocoa powder, pinch of salt
4. Finally add the milk and vanilla extract
5. Line your 2x 20cm round tins with baking paper
6. Split the batter evenly between the two tins
7. Bake for 20 mins on the middle shelf. Be careful not to open the door. Stick a skewer through until it comes out clean
8. Leave to cool completely
9. To make the frosting, using an electric whisk, add in the butter, sieved icing sugar, sieved cocoa powder, Nutella and milk until silky smooth
10. Sandwich the cake together using frosting and then decorate the top with more frosting
11. Using a cheese grater, grate some Dairy Milk or any kind of chocolate into shavings and decorate the top
12. Place 2 whole Walnut Whips on top, and using a sharp knife, cut one in half 
13. Devour the entire cake in 10 minutes from excitement. Or share with the family, that's okay too!
