Recipe Testing: Jane's Patisserie Rolo Cookie Bars

One silver lining when it comes to lockdown is the ability to endlessly bake. I've wanted to venture out a bit more when it came to baking, but truth be told, I'm someone who does love the ease of baking rather than trying something extravagant. But I do promise, I will be trying to make chocolate dipped Madeleines at some point, but for now I wanted to share the Jane's Pattiserie Rolo Cookie Bars I did the other day.

I love a lot of Jane Pattiserie's recipes, I find they're super easy to follow and always go down a treat. Although I did love these, I do have a couple of things I'd probably do a little differently next time. 

Jane Pattiserie's Ingredients & Method 

– 275g Plain Flour
– 1 tsp Bicarbonate of Soda
– 1/2tsp Salt
– 1tbsp Cornflour
– 115g Unsalted Butter/Stork
– 55g Granulated Sugar
– 135g Light Brown Sugar
– 1 Medium Egg, beaten
– 1/2tsp Vanilla Bean Extract
– 2x 126g Bags of Rolos
– 100g Milk Chocolate Chips

1) Preheat your oven to 190C/170C Fan and line a 9x9inch Square Tin with parchment paper, and leave to the side for now.

2) Whisk/Mix the Plain Flour, Bicarbonate, Salt and Cornflour together so its evenly distributed – leave to the side.

3) In a larger bowl, melt the butter. Add in the two sugars, and whisk for about 2 minutes so the sugar starts to dissolve and the mixture is smooth. Add in the Egg and the Vanilla, and whisk again briefly till smooth. (I used an electric whisk)

4) Add in the Dry Ingredients, the Rolos (apart from a handful), and the Chocolate Chips and mix with a spatula till a thick cookie dough is formed.

5) Press the mixture into the bottom of the tin and press in the handful of Rolos into the top for decoration. Bake the traybake in the oven for 25-30 minutes, until the top of the cookie bake looks ‘dry’!

6) Leave the cookie bake to cool for about 10 minutes, then leave to cool fully on a wire rack. Cut the bake into 4×4 for decent sizes, or 5×5 for smaller ones! Enjoy!

Immediately some of the things I changed included using salted butter instead of unsalted as I find that does give a much better flavour (almost instead of adding *a pinch of salt) and instead of using chocolate chips, I used a cut up dairy milk bar as I find that chocolate chips always taste a bit plastic-like. 

My slight changes shouldn't have made a difference but immediately these are a couple of things I would probably change. 

1) Cook for 15 minutes in the first instance. I cooked mine for around 17 minutes and they were still quite crispy. Obviously this is depending on the type of oven you use, but if you're looking for a softer and gooey centre (although mine was still quite soft) I would recommend timer on at 15 minutes and initially see how they're doing at that point. 

2) I would use more granulated sugar vs brown sugar. The lovely thing about brown sugar is it does add more of a caramel flavour and softer texture however in this instance because it was quite a lot of brown vs caster, I felt as if you could really taste the brown sugar in the bars. Maybe a 80g of granulated and 110g of brown.

3) I would still keep my salted butter, just because I've always been one to bake with salted butter as I find the flavour is much nicer with it in! 

4) I would add way more rolos and less chocolate chunks. I love rolos and could have done with just an extra couple of grams - maybe around 150g in total and take away 20g of chocolate chunks. I just feel as a rolo cookie bar, you want majority rolo!

  4. I know it's not the point of this recipe post, but I adore that fork!! :') It's so pretty, & now I'm wishing that I had prettier cutlery haha. I would definitely have to swap milk choc for dark if I did this, as I find milk too sweet! I love brown sugar, but you're so right on its effect, and I think increasing the granulated makes so much sense x
