Cadbury's Dairy Milk Chocolate Cupcakes With Salted Caramel

So the last batch of chocolate cupcakes I made I wasn't a massive fan of when it came to the recipe, and whilst I will try the recipe again, I thought I'd do another cupcake recipe for those with an incredibly sweet tooth. Welcome to the Cadbury's Dairy Milk Chocolate Cupcakes, filled with Salted Caramel spread, topped with Dairy Milk buttercream, salted caramel sauce and a square of DM. Yes essentially there was a lot of chocolate and caramel. 

For the cupcake and buttercream recipe I used Jane Pattiserie's Cadbury Cupcake recipe which was easy to use but made some mild adjustments. I also used her buttercream recipe, which I found a bit of a nightmare truth be told, but with some additional milk and panic, made it work. 

Ingredients 

For The Cupcakes 

150g Salted butter
150g Light brown sugar
3 Medium eggs
125g Self-raising flour
25g Cocoa Powder 

For The Buttercream

125g Salted Butter (room temp)
250g Icing Sugar
150g Cadbury's Dairy Milk (room temp)
4 tbsp Milk 

Method

1. Heat your oven to 180c and line 12 cupcake tins with cases. 

2. Beat the butter and the sugar until light and fluffy. 

3. Add in your eggs, self-raising flower and cocoa powder (I would sieve this) and beat until well mixed.

4. Split the mixture into the cupcake cases evenly 

5. Bake in the oven for 17-20 minutes. Mine took 19 minutes, so check bake with a skewer, take out when it comes out clean. 

6. Leave to cool

7. Using a small sharp knife, carve out holes into your cupcakes for the caramel spread. Keep the leftover cake to one side (preferably keep each piece next to corresponding cupcake) 

8. Pop the leftover cake lids bag on the cupcakes

9. To make the buttercream, melt your Daily Milk in a bowl over a simmering hob. Once fully melted leave to the side to cool. 

10. Beat the butter together to loosen it. Gradually add in your icing sugar and beat for 3/4 minutes until it's fully combined and looks smooth. 

11. Add in the melted chocolate. If your chocolate buttercream turns into flecks/has an odd consistency, add milk until it becomes soft and smooth. 

12. Using a large piping nozzle, decorate your cupcakes. My swirls still need some practice!

13. Finally, heat up the rest of the salted caramel in a tiny pan on the hob until it's thinner in consistency. Using a teaspoon drizzle all over the cupcakes. Decorate with a square of Dairy Milk to finish it off. 

14. Devour the entire batch in 10 minutes from excitement. Or share with friends, that's okay too!
